SHIA is Chef Edward Lee's modern Korean fine dining restaurant in Washington D.C., built on three core commitments: sustainable practices, innovative culinary education, and the elevation of Korean cuisine. Our name, '씨앗 (shi-at)'— meaning 'seed' —embodies our commitment to planting innovation in fine dining. SHIA conducts on-site research to develop viable zero-gas, zero-plastic, and zero-waste solutions, while also addressing broader industry issues through non-profit initiatives focused on positively impacting equity, culture, and the environment.
